Dumplings & Dim Sum

Originally a Cantonese custom, dim sum is popular throughout China. While those bamboo baskets and small plates hold all sorts of steamed and fried delicacies, dumplings are the undisputable stars of the show. Every region gives these little parcels of delectable their own twists. In Shanghai, it's a custom to dip steamed dumplings and juicy buns in vinegar before eating. In northern China, with its colder climate, the preference is for heartier fried dumplings. Fried, steamed or boiled, we love them all. Our fillings include prawn and pork, with wrappers made from both rice and wheat flour dough. Take a peak into our kitchen which can be viewed from the restaurant and watch us make them.

Noodles

Every region of China has its own way of making and serving noodles. Wheat doesn't grow in hot, humid southern China, so noodles made from rice flour are more common and the preference is for mild, flavoured sauces to go with the noodles. In the north, wheat flour noodles are favoured – with those biting cold winds blowing down from Siberia, they like a bit of chilli and spices to warm things up. So what's best in Down Under? Both! We serve rice and wheat noodles at BamBamBoo.

BBQ Meat

In Hong Kong, they have elevated barbecuing pork and roasting duck and chicken to an unprecedented art form. The recipes and techniques they used are hundreds of years old, but we've found a way to improve on them - by using world-class WA meat and poultry.

Tea

The Chinese discovered tea over 2000 years ago, and over time the whole act of preparing and drinking it has become deeply embedded in their culture. It's a way to show respect, give thanks, make apologies and meet the in-laws. It is also believed to aid digestion, calm the spirit and clear the mind. That is one mighty brew!
